FWIW the colors are stored in 
~/Library/Preferences/org.R-project.R.plist
along with all other settings, so if you post that you can share your settings with others. It would certainly be doable to split off the colors piece into a separate file so you can load/save themes. As always, most work would go into creating a GUI to select themes, but simple load/save would be reasonably easy to add.
