Do you really need to install from source? The EPEL RPMs by Tom Callaway from Redhat contain a bundled version of zlib for platforms that do not have an up-to-date system version, and so are much easier to install.
Note that it is not only zlib that is affected. You will have the same issue for bzip, xzv, pcre, and curl.

This information is contained in the "R Installation and Administration" manual, also known as "R-admin". The minimum version required is zlib 1.2.5. You can also see this information in the output from configure, e.g. on my system:
checking if zlib version >= 1.2.5... yes
