My copy of R (Windows 1.5.1) came with both an R Language Manual and an R 
Reference Manual in PDF format.  On that version, they are in the help 
system under "Help > Manuals".

The books by Venables and Ripley are standard recommendations.  "Modern 
Applied Statistics with S-Plus" and "S Programming."

You can also check amazon.com by searching for books on S-Plus.  Since 
S-Plus and R are both implementations of the S language, much of the 
documentation for S-Plus applies to R.

There is a fairly simple statistics book by Steve Selvin that uses S-Plus 
for the analyses.  The title is "Modern Applied Biostatistical Methods 
Using S-Plus."  Although it is a few years old, its coverage of S is mainly 
on programming, rather than GUI issues, so it might be useful in getting 
started with R.

Finally, try searching the Web for "S Language" or "S-Plus" or "S" and 
"statistics".
