[BioC] AnnotationDbi for organisms not on bioconductor.org

Greetings

Is there documentation for creating annotation objects from scratch,  
i.e., for unsupported organisms? I am analyzing expression data for an  
organism that is not on the list at bioconductor.org. How would one go  
about creating one of those files? Is it much more than organizing the  
available data according to a defined schema?
