For a part of the 'plot' command:

...ylab=expression(paste('rate (',degree~C^-1,')'))...

Is it possible to introduce 'thinspace' (e.g. '\thinspace' in LaTeX)
between the degree (°) sign and the centigrade (C) symbol?
