Try
unlist(gregexpr("working", gsub("not working", " ", sentence)))
unlist(gregexpr("not working", sentence))
The lengths of the outputs are what you want.
Also look at the argument 'ignore.case' of BOTH 'gsub' and 'gregexpr'.
