[ESS] M-n s is undefined

For the PDF preview, I see the full PDF rendered in all its glory inside of
Emacs.

For the bracketed files, I get for
  test.Rmd
  test[wowen].tex
  test[exported].pdf
I agree it might be nice (and might already be possible) to get the output
file named without [].

You're not picking exporter first and then weaver.  You are first asked to
pick how to go from Rmd to intermediate file such as Latex and then you're
asked what the Latex file should be output as.
