I use a shell script 

dhcp48$ cat ~/bin/CarbonEmacs 
#! /bin/sh
/data/src/bleeding/emacs/mac/Emacs.app/Contents/MacOS/Emacs "$@"

and launch Carbon Emacs (built from CVS) from a terminal.
