minimial Xemacs for ESS?

This is difficult.  There are many modes that they don't need;
however, some are potentially useful: ediff (2 and 3-way file
comparison and merging), vc (but only if you introduce CVS or RCS),
shell mode (sh-mode), comint (needed for ESS), dired (filebrowser),
edit-utils (basic stuff), efs or tramp (remote file access),
fsf-compat, speedbar, ecb (these are "IDE" editing tools which may be
useful).

Are they doing any HTML/XML work?  There is a whole slew of tools for
XEmacs for this.

Some aren't in the emacs package system, though -- if running under
a unix-style OS (i.e. Linux), x-symbol and preview-latex are steps
towards making LaTeX WYSIWYG.

for ascii, you might consider text-mode or fundamental-mode; the
advantage of text mode is that it handles indentation via the TAB key
a bit nicer.

See my earlier response for LaTeX modes, and add x-symbol (external
package).
