I'm not exactly sure what you're asking, so let me rephrase:

Are you asking how to find the genes that exhibit the smallest
fold-change between your two conditions?
Or do you just want to look at the variance of the "absolute" gene
expression without considering the "labels"/conditions of the data?

Or?
